Butternut Squash Fries with Chinese Peanut Sauce-

First let me say that you can use butternut squash or sweet potatoes- both work and!
taste great with this AMAZING peanut sauce!

I am becoming extremely creative with my cooking since we have been cooking and eating home for the past 60 + days.  Can you imagine how good these crunchy baked butternut squash or sweet potato fries taste drizzled with gingered peanut sauce?




Before you read another word, I want you to know that the peanut sauce is the BOMB if you make it the day before and refrigerate it overnight. There so said! Not only is it amazing with this recipe- but you could toss it with cold noodles (gluten-free of course) and have the most incredible taste ever!! OK- Just saying!

If you are not a fan of butternut squash (or don't like to peel it),  sweet potato curly fries taste really good with this sauce too. You'll need to dust off your spiralizer (if you don't have a spiralizer, just slice your fries) to make this amazingly interesting treat for a side for dinner tonight using sweet potatoes!

If you are thinking about purchasing a spiralizer to make vegetable noodles such as zucchini or sweet potato, there are many kinds of spiralizers. I do not like the handheld types; it takes too much effort. I like the models that rest on the counter with a crank. I love curly sweet potatoes fries, and I love peanut sauce. Together, they make an amazing side dish! If you are vegan, gluten-free, or just looking for more plant-based recipes, you have come to the right place.

I've made this recipe as simple to make as possible, so you will love it too!

I know many of us are looking or ways to excite the taste buds right now because we have been cooking at home and many of us tend to make the same dishes over and over~ 

I am not ready to eat out in restaurants or even bring "take out" food in- so I am challenging myself to try to keep the food interesting and at the same time easy and healthy!

You may remember my extremely easy avocado stuffed baked potato recipe that I posted a few weeks ago.  I've also been making my one-minute chocolate pudding for a daily snack.

Butternut Squash Fries

 The reason I sometimes choose to make it with butternut squash is that butternut squash is zero points on WW, while sweet potato has some points. The taste is similar, so it's your choice what you decide to use or what you have in the house right now. I haven't had success trying to spiralize butternut squash.



Ingredients: 
2 sweet potatoes, washed and peeled

Directions: 
Using your spiralizer according to the manufacturer's directions, spiralize your sweet potatoes into curly fries.





Ingredients:
2 tablespoons of nut butter + 1/4 cup of hot water  OR
3 tablespoons of  peanut butter powder (affiliate link) +  2 tablespoons of water
1/4 cup or more of gluten-free soy sauce or Bragg's amino acids
Juice of one juicy lime or lemon
1 teaspoon of freshly grated ginger (or 1/4 teaspoon of ground ginger)
1 clove of fresh garlic, pressed or (1/4 teaspoon of garlic powder)
6 drops of liquid stevia or sweetener of your choice (a must)
Optional: chili powder or red pepper flakes to taste

Directions:
Combine all ingredients in a food processor until smooth.
Eat immediately and it is good.
Refrigerate it overnight and it is AMAZING!
I also like the fries cold!!
Heck make both the day before you are serving it, if you like cold food!


Notes: 
1. Fresh garlic, ginger, and lime contain powerful antioxidants that may contain protective properties to help boost your immune system.

2peanut butter powder (affiliate link)  is much lower in fat, therefore I frequently use it in place of nut butter- I reconstitute it with water - nut butter or peanut powder - either will work!

    1. I do love the sweet potato sprialized and then baked. It could also be stir fried and then tossed in the peanut sauce!

  2. Peanut sauce has a lot of potential! I have a bottle of imported Asian peanut sauce that is useful in salad dressing and I think would be great with squash as you show it. I also combine peanut butter and sriracha. But your sauce with grated ginger and citrus juice sounds like the next level!

    1. I used to love it in the Chinese restaurant- I had never really made my own that much, but the times they are a changing. I'm trying all kinds of recipes just to keep the food more interesting!

    1. I love my spiralizer too- although I do have a hard time using it for butternut squash. I cut the butternut into strips but spiralized the sweet potato-
