Can I substitute Anything For The Pumpkin?
Yes, butternut squash cubes are a perfect substitute for cubes of up pumpkin. Or use the pureed pumpkin from a can if you don't want to cut up a pie pumpkin.

Pumpkins are so attractive - colour, shape, size. I know they come in different colours, but I always think of the orange ones as traditional.

i like pumpkin...the hubs LOVES it and this is something i would def make. i don't cook with curry generally, i like the description you gave it. i don't know why but for some reason i thought it was spicy/peppery??? i love pumpkins and can spend 15 minutes just picking out one. the last one pictured is PERFECT. if i saw it, i would select it!!
