Watermelon, Cucumber, Tomato, and Mint salad

When temperatures start to rise to over 90 degrees, you will welcome this refreshing watermelon, cucumber, and tomato salad seasoned with chopped scallions and freshly chopped mint-  it is sweet, savory delicious and takes advantage of end of summer produce.
 

This revitalizing salad is perfect during hot and humid summer heat waves when the need to hydrate is so important, and you only feel like eating something light.

Fresh mint enhances the natural flavors in this medley, and it tastes especially interesting paired with the pungent chopped scallions. If you can't find fresh mint, you could easily substitute fresh basil which will have a different- but equally fragrant taste.



Whether you are attending a summer BBQ, a get together with friends or family, just looking for a light lunch, this easy to make salad would be great.

I remember when I was very young, we didn't have seedless watermelons, and it was quite an adventure eating a slice of watermelon and having to spit out the seeds.

Now, with seedless melons, it is so much easier to eat and prepare watermelon for salads.

Although I cut my watermelon into balls using my cute melon ball scooper, you could cut your watermelon in chunks or even sticks. 

If you have watermelon left over, I have also made (link) watermelon limeade which is an extremely refreshing summer (non-alcoholic) drink and looks blissful. 

In addition, I have cut watermelon into cubes, frozen them in baggies, and kept them to make really refreshing (link) watermelon smoothies.

I have also made a simple dessert of (link) watermelon balls in orange blossom water mixed  with chopped fresh mint which tastes  exotically delicious.

Serves : 2

Ingredients:

3 cups of watermelon, chunked or made into balls
1 cup of cucumber, chopped
1 cup of chopped tomatoes. 
1/2 cup of chopped scallions
1/2 cup of chopped fresh mint
Optional: 2 tablespoons of lemon juice (I did not) 

Directions: 
Combine all ingredients in a large bowl. Mix well and serve

Notes: 

1. Watermelon is about 90% water and contains a good amount of electrolytes to help balance ph levels in the summer. In addition, it contains vitamins, minerals, and antioxidants

2. Antioxidants found in fruits and vegetables help eliminate free radicals in the body which are a by product of our natural metabolism, or from exposure to air pollution, smoking, 2nd hand smoke, and stress. An accumulation of free radicals in the body can lead to oxidative stress which may damage cells which may play a role in diseases such as cancer and heart disease (source).

  1. One of the best summer salads! I just bought a huge watermelon though pumpkins are already everywhere, but I just couldn't resist!

    1. I can't get enough watermelon; I really love it. The problem is I eat too much of it . Once I start cutting open a watermelon, I eat like 1/2 of it in a day.

  3. Locally grown watermelons here have seeds in them -- but also have a more vibrant flavor than the seedless varieties. Too bad!

  4. You always come up with the most interesting combinations. I do love a watermelon and mint salad, but it never would have occurred to me, ever, to add tomatoes.

  5. Watermelon is one fruit I don't like or should I say any kind of melon, so even though your salad looks very pretty, I would be a hard pass. Taste is so individual though. When my son was a kid he could eat a quarter of a watermelon without a second look.
