Quick 2 Ingredient Ice Cream- No Machine


Creamy strawberry ice cream, made from fresh fruit and nothing else, can be whipped up in your food processor in just minutes! It's a rich refreshing dessert that is not only delicious, it is also good for you. If you want to restrict the amount of sugar that your kids (or you) eat, then this is a great alternative to store-bought, high sugar, dairy-rich ice cream.  





Because this method does not contain any kind of milk or cream, it is more like a creamy sorbet- but I think of it like ice cream. You could always add a little nut milk for a more ice cream-like consistency. I might add 1/4 cup of full-fat coconut milk to the recipe for heavier ice cream.

As the temperatures are getting warmer, and we are looking for refreshing snacks, this is an "easy peasy" recipe to keep in mind. You are not restricted to frozen strawberries. If you are not a fan of strawberries, this recipe will also work using frozen blueberries, frozen peaches, or even frozen mango. 




As long as you start with frozen bananas, you can choose any other frozen fruit to make an ice cream flavor that pleases you. The frozen bananas are the key to the creaminess and sweetness; you can't leave them out! You can also add mini chocolate chips, lemon zest, or even chopped nuts to add texture and enhance the flavor.

If you are watching your weight, you'll be glad to know that there is no added fat in this creamy ice cream, and on Weight Watchers, this recipe is considered zero points.

Late May or early June is the season for farm-fresh local strawberries. There is nothing like a lusciously red, juicy, and delicious sun-kissed strawberry right from a local field.



When I am lucky enough to go organic strawberry picking with the grandkids, or when I find a nice supply of fresh field strawberries at the local farmer's market, I usually freeze some of the fruit for future use when I want to make a smoothie or this ice cream.

This method is so fast and easy, I can whip my favorite flavor of ice cream to eat immediately, or I can store some in individual ramekins for another time. I use individual-sized portions for freezing because I have tried larger containers and the ice cream tended to get too hard to scoop out when I'm ready to eat it.



This ice cream is dairy-free, gluten-free, parve, vegan, and nut-free. Basically,  it's suitable for almost any type of diet, making it very allergy-friendly.

The taste of this dessert is dependent on how ripe and how sweet the fruit tastes. If your fruit is tart, you could add a little sweetener of your choice. I would choose some liquid stevia.



I often make frozen strawberries and add a little lemon zest for an interesting flavor.
I like to snack, but I don't want to eat sugary desserts or high-calorie desserts. This is very satisfying.

In addition, another low calorie but healthy dessert that I make is my one minute Weight Watchers chocolate pudding. Both desserts help me tame my sweet tooth without feeling derived.  Chocolate Pudding.

2 Ingredient Ice Cream Recipe

Prep: 1 minute
Food Processor: 2 minutes
Freeze Time:  Only if you want to store it- not necessary

Ingredients: 
2 cups of frozen bananas (frozen overnight)
2 cups of sliced frozen strawberries
optional: 1/4 cup of coconut milk
optional: a pinch of fresh lemon zest, a little chopped mint or basil,  and or mini chocolate chips

Directions:
Put all of the ingredients into the food processor using the metal blade. Pulse the food processor on and off until it begins to form a smooth creamy texture. When it looks like ice cream, stop.
Serve immediately or divide into two ramekins and freeze for later.

Notes: 

1. For an extra rich treat, add and mix with a spoon mini chocolate chips to the ice cream before serving or freezing.

2. Beware! According to the EWG (Environmental Working Group), strawberries are grown with large amounts of pesticides. For that reason, I feel it is worth the extra money to always use organic strawberries. The EWG publishes 2 lists of foods. One is called the Dirty Dozen and the other is called the Clean Fifteen. The Dirty Dozen lists the 12 most highly sprayed fruits and vegetables. Strawberries top the list! Here is an article explaining it.

  7. I was told that pureed fruits weren't zero points on WW as I always counted them as zero too. I use them to make Popsicles with fat free yogurt. I keep trying to find a banana substitute though as I really do not like bananas at all.
