Braised Red Cabbage, Apple, and Walnut Side dish

Looking for a simple but healthy fall side dish? 

I was craving red cabbage today and now that it is fall, I didn't feel like eating it raw.
I decided to make a simple side that was colorful, healthy and delicious. 

I braised red cabbage and then tossed it with grated apples, walnuts and seeds.  I also made a variation with broccoli raab!

The grated apple and the apple cider vinegar added a touch of sweetness to the pungent broccoli raab. I am a fan of strong tasting greens. I'm sure you could substitute a milder green like baby spinach. 

You also can make with without the greens as in the top photo!

They say we should eat a rainbow of colors and this deep purple vegetable is loaded with flavonoids and sulphur compounds- both which may be protective against cancer. In addition, red cabbage has Vitamin A, Vitamin C, Vitamin K, a good amount of fiber, low fat and low calories.

They are defiantly high energy foods!  If you make it with a green, well even more good healthy immune boosting and nourishing nutrients.
Add in the healthy fat from the nuts, and the raw apple- you've got one healthy side dish!!!

My recipes always meet gluten free, vegetarian, and or vegan standards!

Weight Watchers Freestyle Points: 2 points for the walnuts- if you leave them off it's zero

1/4 of a small head of red cabbage, sliced
1 tablespoon of walnuts
1 large organic grated apple ( with skin) 
1 teaspoon of cumin seeds or caraway seeds
olive oil spray 
1/4 cup apple cider vinegar or lemon juice

Grate the apple and soak it in the apple cider vinegar ( or lemon juice) and set aside.
Spray a skillet with olive oil spray or oil of choice. Add cumin or caraway seeds and the cabbage.  Sautee quickly tossing frequently for about 2 minutes. Stop before the cabbage is completely soft and turns color. I like the cabbage crisp and deep purple. Remove the cabbage from the skillet. In a mixing bowl toss cabbage, soaked grated apple an any liquid, walnuts. Eat immediately.
