You might think popsicles are just for kids, but in this heat, my husband and I really enjoy them. During this pandemic, I am especially focusing on "individual" ways to serve friends and family outside on my deck. Popsicles qualify!

Savory Indian Vegetable Pancakes
Savory Indian Vegetable Pancakes are delicious and very easy to make. It's been over 77 days since I've been "staying in." (Although I have been taking daily walks with a mask, and I have been doing my own grocery shopping, but not too often)
Since we are not eating or ordering out, I am doing a significant amount of daily cooking. I've been experimenting with recipes that I wouldn't ordinarily make. We do really like Indian and Asian food, so out of desperation, I've started to give some recipes a try! Two weeks ago, I made an Asian recipe called Mongolian Mushrooms and Tofu that was fabulous. This week I thought I would try an Indian pancake.

One Minute Chocolate Pudding
My one-minute Chocolate Pudding recipe is a perfect way to stick to healthy but still enjoy eating something very decadent !!
Do you remember your mom making homemade chocolate pudding, and it had a skin on top and was so delicious? This one is similar, but it will only take a minute to make and this contains healthier and lower calorie ingredients.
It's the best dessert ever when wanting something rich that you can make very quickly. For kids, you can add real peanut butter instead of Peanut butter powder if you don't mind the extra fat content.

Banana Split Bites
I love these adorable desserts.
Does it get any cuter than these chocolate dipped banana bites?
They are a perfect dessert especially
for kids. They can be made in about 10 minutes and do not require baking! Depending on the color sprinkles that you choose, you can make them patriotic in red, white, and blue or to match any theme.
( Check that your sprinkles are gluten free)Follow my simple recipe, which just calls for dipping in chocolate, rolling in sprinkles, and topping with whipped cream. ( see recipe for vegan coconut whipped cream below) Or you can try scooping out a little of the banana and filling it with ice cream.
Make These Simple Dessert With Kids
Making these banana split bites is a fun project to make with kids. Kids love to make desserts like brownies, cookies, and cupcakes. This is a fun addition that you can add to your repertoire. The best part is you won't even have to turn on your oven.

Prep Time: 10 minutes
Ingredients
3 firm bananas, each cut into thirds
1 cup dark chocolate chips, melted in a small bowl
1 can whipped cream ( or make you own) or use whipped coconut cream for vegan altertnaive ( recipe below)
Sprinkles ( or chopped nuts) for decoration in a small bowl
Also assemble:
cookie sheet covered with waxed paper
Directions:
Wash the bananas.Leaving on the peel, cut bananas into thirds. Wait to remove peel just before you dip the bottom of the banana in melted chocolate chips and then sprinkles and place on waxed paper on cookie sheet. Place in the freezer for about 5-10 minutes so the chocolate can become firm. Remove from freezer, Top with whipped cream ( or whipped coconut cream (see link below) for a non dairy version) and add a blueberry to the top.
