Quick Asian Lunch Idea For One

When do I make this quick and easy lunch for one? 
Usually when I'm in a rush, I do not feel like cooking, or when I'm lazy or tired! In just minutes, I am able to make my quick and delicious lunch idea for one.

It's one of my easiest and favorite lunches!

I start with a package of "Thai Kitchen Garlic Noodle Soup" (it's gluten free and vegan too and a packet serves one) as my base.

These packets are sold individually in many supermarkets in the Asian section (I'm not endorsing them, just sharing what I made)

I measure the water according to the package directions and add it to a small sauce pan. I then add the seasoning mix but I omit the oil packet. 


I add the dry rice noodles, a 1/2-1 cup of vegetable broth, 1/2 teaspoon of turmeric powder, some thinly sliced kale. and 1/2 cup of cut up tofu to the pan.

I bring it all to a boil and then simmer until the noodles are cooked (about 3 minutes). When it is done, I then top the soup with sprouts and or any fresh herbs such as fresh basil, scallions, cilantro, or mint.

Sometimes I give it a few squirts of fresh lime as well.

It's a quick, filling, delicious lunch that I can throw together in 5-10 minutes. If I am still hungry- I might eat a rice cracker or two!

Is it Pho? No, but it's a similar type substitute.

Ingredients: 
1 packet of Thai Kitchen Noodle Soup ( noodles and seasoning mix)
 Water (directions on packet)
1/2 cup of cubed tofu
1/2 teaspoon of turmeric
1/2 - 1 cup of vegetable broth
1/8 teaspoon of garlic powder
1/2 cup of kale cut into ribbons
Toppings: chopped scallion, mint, basil, fresh lime juice and or sprouts 

Directions: 
Put everything except the topping into a saucepan and bring to a boil. Reduce to a simmer and cook for about 3-4 minutes until noodles are soft and separated (stirring occasionally)

  13. What a great idea to use a soup packet. I have seen these in the grocery stores, but never thought to try them. I don’t have kale, but I do have bok choy, and I’m guessing that would work equally well. Looks delicious.
