Quick Asian Lunch Idea For One

vegan noodle soup with tofu and kale

When do I make this quick and easy lunch for one?
Usually when I'm in a rush, I do not feel like cooking, or when I'm lazy or tired! In just minutes, I am able to make my quick and delicious lunch idea for one.

It's one of my easiest and favorite lunches!

cooked pasta with green veggies

I start with a package of "Thai Kitchen Garlic Noodle Soup" (it's gluten free and vegan too and a packet serves one) as my base.

Thai Kitchen Instant Rice Noodle Soup, Garlic and Vegetables, 1.6-Ounce Unit (Pack of 12)Thai Kitchen Onion Instant Noodle, 1.6 Oz (Pack of 12)

These packets are sold individually in many supermarkets in the Asian section (I'm not endorsing them, just sharing what I made)

I measure the water according to the package directions and add it to a small sauce pan. I then add the seasoning mix but I omit the oil packet.

I add the dry rice noodles, a 1/2-1 cup of vegetable broth, 1/2 teaspoon of turmeric powder, some thinly sliced kale. and 1/2 cup of cut up tofu to the pan.

I bring it all to a boil and then simmer until the noodles are cooked (about 3 minutes). When it is done, I then top the soup with sprouts and or any fresh herbs such as fresh basil, scallions, cilantro, or mint.

Sometimes I give it a few squirts of fresh lime as well.

It's a quick, filling, delicious lunch that I can throw together in 5-10 minutes. If I am still hungry- I might eat a rice cracker or two!

Is it Pho? No, but it's a similar type substitute.

1 packet of Thai Kitchen Noodle Soup ( noodles and seasoning mix)
 Water (directions on packet)
1/2 cup of cubed tofu
1/2 teaspoon of turmeric
1/2 - 1 cup of vegetable broth
1/8 teaspoon of garlic powder
1/2 cup of kale cut into ribbons
Toppings: chopped scallion, mint, basil, fresh lime juice and or sprouts

Put everything except the topping into a saucepan and bring to a boil. Reduce to a simmer and cook for about 3-4 minutes until noodles are soft and separated (stirring occasionally)

  1. I've had other packaged foods from this brand, and they seem to have good quality.
    best, mae at

  2. It looks like a light and satisfying lunch!

  3. YUM... this is such a fun lunch recipe. The fresh herbs and lime juice add the perfect finishing touch!

  4. Great idea, cooking for one can be more difficult than cooking for a large family.

  5. I've never bought those before. Thanks for the recommendation.

  6. This sounds like a fun idea -- so nice to see how simple garnishes can transform an out-of-the-box mix into something much more interesting! (anno)

  7. Oh I'm familiar with this noodles brand - they're really good. And what a great idea to elevate a simple and quick dish to a different level!

  8. Meanwhile, I'm making deviled eggs for lunch. But I'm also having hummus and veggies. :)

  9. I m always wary of packaged Noodle Soups because of the ingredients. What are in yours?

  10. I love all the vibrant greens! As always, you make everything appetizing. 💚💚💚

  11. A lunch you clearly enjoy :)

    All the best Jan

  12. It is a delicious idea for lunch!.....Abrazotes, Marcela

  13. What a great idea to use a soup packet. I have seen these in the grocery stores, but never thought to try them. I don’t have kale, but I do have bok choy, and I’m guessing that would work equally well. Looks delicious.

  14. We appreciate you dropping by and linking up at SSPS 290. Awesome and I can use it for for my vegan family members as well
    Take care and best wishes.
