Zucchini Noodles, Spinach, and Salsa - an easy side dish

Looking for ways to eat more healthy green vegetables?
 

Chow down on this easy vegetable side dish. made with zucchini and baby spinach. It is low in calories, spicy and amazing. 

It's one of the easiest tasty vegetable recipes that I make and very low in calories and carbs!

I simply spiral-ize zucchini using my spiralizer (I use this one) which takes about 1 minute.

I then add the zucchini to a skillet, add 1 cup of organic chunky salsa, 3/4 cup of water, and begin to cook down over a medium heat. After about 3 minutes, I cover the zucchini with fresh baby spinach leaves (about 2 cups) and cook down until all is soft and wilted.

That's it and it tastes great, is filling, and satisfying. 

I always love eating regular spaghetti and this reminds me of eating a bowl of pasta. It's a healthy vegetable dish, and I enjoy every bite.

Although I love all vegetables, I try to make sure I get enough alkalizing detoxifying dark leafy greens in my diet such as spinach.

What's so special about dark leafy greens such as spinach, kale, collards, escarole, watercress, swiss chard, beet greens, etc? 

Dark green leafy vegetables are loaded with antioxidants that help reduce oxidative stress in the body which may lead to disease. These type of greens provide plant-based calcium, lutein and zeaxanthin which are protective of the eyes, helps the body detox, and offers lots of nutrients as well.
