Fresh Corn and Blueberry Salad

Got corn on the cob? 
Talk about an unusual yet tasty salad! Sweet corn and sweet blueberries mix beautifully in this colorful summer salad.

I am fortunate to live in an area when fresh corn on the cob grows locally, is abundant, sweet, and delicious. If you follow my blog, you may remember that my favorite way of eating corn on the cob is raw- without cooking it. I cut the kernels right off the cob and find they are tender, juicy, sweet, and delicious.

I originally ate this salad at my friend Fern's house at the Jersey shore and, I really enjoyed it. Like you, before I tasted it, I was thinking corn and blueberries?

It is simple to make, gluten-free, oil-free, parve, and vegan.

While it's still corn season and you've got fresh summer corn, give this delicious recipe a try.

I was able to get a pint of organic blueberries at Aldi's for $3.99. I am usually able to get a good variety and quality of fresh organic produce at Aldi's.

Prep Time: 15 minutes
Cook Time: none
Serves: 5-6 sides

Ingredients: 
1 pint of organic blueberries, washed and dried
3 ears of corn on the cob, husked and washed
1/4 cup of finely diced red onion 
2 tablespoons of freshly squeezed lime 
Optional: salt and pepper to taste

Directions: 
Using a chopping knife, cut the cut off the cob. Add to a large mixing bowl along with the blueberries, red onion and lime. Season with salt and pepper if desired ( I didn't; Fern did). Serve at room temperature or refrigerate and serve later. 

My notes: 
1. This salad will keep 2 days in the refrigerator. 
2. The local farmer's market, where I get my corn, grows corn from non-GMO seeds which is a big plus. Ask your local farmers if their seeds are non-GMO. You may find one farmer that is . Of course any organic farms are non-GMO seeds.
3. If you don't have lime, substitute lemon

  13. I routinely add corn and blueberries to my lettuce salads, but it never occurred to me to eliminate the lettuce and have a strictly blueberry and corn salad. This looks amazing! I’m going to try it. I’m just, this moment, making out my shopping list.
