Zucchini and Sun Dried Tomato Sauce for April in the Raw

I'm posting  one of my previous raw food recipes zucchini pasta and sun dried tomato sauce to the April in the Raw blog event.


Raw food is so healthy. I try to incorporate as much of it as possible into my diet.
I drink freshly made juice each morning.  I juice romaine lettuce, carrots, celery, cucumber, beets, and kale in my juicer.  I love fresh vegetable juice because it doesn't have to be digested like food and is nutritionally available within minutes to my body.  I drink it on an empty stomach to allow the fresh enzymes, vitamins, minerals, and antioxidants to flood into my system and nourish all the cells.I feel like I am drinking "green magic." read more about how and why to juice.


I also eat a raw green leafy salad greens and a variety of colors to reap the benefit of a wide spectrum of antioxidants daily. I eat red peppers, cucumbers, romaine lettuce, tomatoes, red cabbage, green cabbage, , carrots etc. to give myself the nutritional benefits that only a rainbow of colors can provide.
