I absolutely love the old 1934 song Summertime 🎵🎵 (written by George Gershwin and performed in the musical Porgy and Bess)—it perfectly captures the easygoing vibe of the season.
There's something about summer that makes everything feel a bit more relaxed: simple dinners out on the deck, lighter meals, golden sunlight stretching well into the evening, leisurely evening walks, and casual get-togethers with friends, and even a lazy afternoon nap.

Not our dog... just got the photo of him |
But I’ll be honest—when the temperatures start climbing into the high 90s (like they have for the past month), my motivation to cook drops fast.
My kitchen has definitely noticed the change... These days, I’ve been leaning heavily into no-fuss, no-heat meals like fresh salads, chilled gazpacho, simple sandwiches, and veggies. Real cooking? Not so much.
Real Heat
When I was growing up, we didn’t have air conditioning—neither in the house nor the car (1950's). Summer meant spending evenings outside on the "stoop"c , sipping ice-cold lemonade, eating popsicles, and chatting with our next-door neighbors. We lived in a row houses, so we were close to each other in every way.
While the adults swapped stories and talked for hours, we kids played endless games of hide-and-seek.
On Sundays—my dad’s only day off—we would pile into the car and my dad would take us for long drives along the shady stretches off the Delaware River towards New Hope, Pa. My mom didn’t drive, so these outings were something we really looked forward to. We’d roll down all the windows (no A/C, of course) and let the breeze rush in, cooling off as we soaked in the simple joy of a Sunday ride.
Yes, it is now "summertime" and the living is easier because we do have air-conditioning in our home and in the car. Yet, I tend to feel lazier in the real hot weather and try to minimize cooking.
I'm sharing some easy summer recipes with links to the recipe. For protein, I tend to add tofu or open a can of chickpeas or black beans and add it to salads.
Corn, Cucumber, olive Salad with Creamy Lime Dressing (yum)
Rice with avocado, chickpeas, sesame seeds, avocado and spices
Quinoa Tabouleh salad (lovely)
Jersey Corn, fresh basil, and Tomato Salad (The best!!)
Frozen Kiwi Mojito (Refreshing with or without alcohol)
Red Cabbage Potato Salad (no mayo- a lemon dressing)
Sushi in a Bowl: Perfect Easy Summer Meal
Mango Peach Summer Salad (outstanding and tasty)
I share easy plant-based healthy recipes that meet gluten-free standards.
I still bake and cook in summer time :-) I hardly sweat....even when I work out and lift weight, I don't sweat much. Plus our summer is very mild and this year is even milder..the temperature has been lingered on 12-25C and rainy during last 3-4 weeks. Today we finally have some SUNSHINE...Hooray!!
ReplyDeleteI do cook but don't bake!! Our summer so far has been oppressively hot in the upper 90's most days. I think it's starting to cool off a little but then September is usually pretty hot again.
DeleteSalads are popular here as well. You have great memories of summer growing up. I do too and we managed without air conditioning. We rarely use it in the car today. The windows are down and the breeze is enough.
ReplyDeleteYes, things have changed so much. I like to think about the days growing up.
DeleteWe are entering another long heat wave and I'm not enjoying it at all.
ReplyDeleteThank you for sharing so many summer meal ideas.
It's cooled off a little here so I might actually make soup tomorrow.
DeleteI have some of those wonderful memories myself, my favorite item no longer on cars, was the wing window in the front seat! Sometimes as one of the older kids, I got to sit up front, that wing window and I were best friends. Off to look at that Frozen Kiwi Mojito, and others. Thanks Judee for a great memory stirring visit!
ReplyDeleteInteresting about the winged window. I'm not sure I remember that. I'll have to look it up maybe I'll recognize it.
DeleteI'll admit it's easier for me to make tried and true recipes (even if it means turning on the oven) than to come up with new ideas.
ReplyDeleteI do understand
DeleteWe didn't have air conditioning growing up either. Though it was the 80's and available, we were just poor LOL. Though I do remember all the fun we had with deck dining, romping through the sprinklers, sitting in front of a box fan making robot noises. Those were the days!
ReplyDeleteThis is such a perfect summertime dish. I don't like to cook when it's this hot out either, so we tend to make these kinds of meals frequently during the hottest months of the year.
The hotter it gets, the less I feel like cooking although I do have air conditioning so it shouldn't make a difference. I think when it's really hot outside I don't feel like eating heavier food.
DeleteOur house doesn't have air conditioning so when it is really hot it is so uncomfortable. Like you, I will turn to salads rather than cook. Lovely memories of your childhood.
ReplyDeleteTandy (Lavender and Lime) https://tandysinclair.com
thanks Tandy.
DeleteDuring the heat of summer, simple is best. I doubt that anyone would argue with that.
ReplyDeleteAgreed David!!!
DeleteSuch yummy looking salads! We never had air conditioning growing up either but I am so thankful for it as an adult.
ReplyDeleteI am thankful too. I didn't have air when my kids were small and boy it was hard to sleep at night. We finally got a window unit for the living room and we the kids and us would sleep on the floor in the cooler air some nights. We were married sixteen years before we had central air... I'm grateful.
DeleteYou have turned my head with that corn, cucumber, and olive salad. That’s a combination I have it tried, but it sounds delicious. Sadly, it looks like my cucumbers are coming to an end. Previously, I would bring in two or three every day. The fresh ones don’t last like the wax ones in the grocery store do, so I was eating a cucumber or two a day. I love them, so it’s no problem. I’m going to try that salad.
ReplyDeleteI'm a fan of cucumber too. You are fortunate to have home grown.
DeleteLovely photos of these 🥗 salads. The yellow lab is adorable 💛
ReplyDeleteThank you.
DeleteOh yum, all these dishes look delicious. My husband and I didn't grow up with air conditioning either. We were just talking about how spoiled people are today with the central air. We still don't have central air, but we do have two window air conditioners. Your dog is so cute!
ReplyDeleteWe have central air now and we enjoy it.
DeleteI love all the food, but I can't get over how beautiful that table is on your deck!
ReplyDeletethe table was an end of season purchase last summer. We do adore it.
DeleteNo air for us growing up either and honestly, I didn't need it. Or even remember it being hot. Just was part of the day. Though later in life, I started hearing about folks with central air and that was a big taaaaa-dooo. Back in the day. Now, it just feels normal that folks have it.
ReplyDeleteHappy Not Cooking and cooler meals. I love berries, by the way. Can eat bunches and bunches and call it a meal. Delish! Though full confession, I make and eat Instant Pot soup in the summer too. I can't help it. It's just so good.
I make some soup too. The IP doesn't heat up the house and sometimes I just want a good bowl of soup.
Delete100% yes! And so fast in the pressure cooker. It's not as good but it's still really, really good. I love tossing stuff in there.
DeleteYes, I love summers especially eating out on the deck and making salads.
ReplyDeleteWe didn't get to eat on the deck too often this year because of the heat, but it's starting to cool off a little.
DeleteI am glad you have air con now, but your childhood memories sound rather nice too!
ReplyDeleteWe've also had a lot of chilled gazpacho this summer. Far too hot for regular soup.
I think we all have wonderful memories from childhood especially the food. I agree salads are supreme in summer heat.
ReplyDeleteWhat beautiful memories of going on a drive with Dad. You explained it so well. Nostalgic! Thank you for sharing wonderful, healthy and easy recipes. Hugs.
ReplyDeleteThis is my ideal summer meal plan. Thank goodness for AC! It wasn't much of an issue for me when I was growing up either, but now, here in Texas, I wouldn't survive without it.
ReplyDeletewe have been eating like this...a lot of salads and easy pasta dishes!! we had a little bit of a cool down but are expecting another heat wave this week. i am thankful every day for air conditioning, providing me with the ability to enjoy life during the summer. thank you for the recipes!!
ReplyDeleteI am in love with your rice dish. It's both refreshing and hearty, and perfect as a meal all by itself! And... I am definitely thankful for ac on these hot summer days Although a leisurely drive with the windows down is always fun, too!
ReplyDeleteI love that song too! It really does say it all and is the perfect opener for your summer memories. Sitting on the stoop eating popsicles -- AC or not! -- sounds idyllic. 🎵🍧🌞
