I have not felt much like cooking, so I've been on the lookout for interesting summer salad recipes.
I didn't have to look very far.
Carol at Comfort Spring Blog posted a delicious beautiful looking salad this week that is made with black beans, avocado, cucumber, cherry tomatoes, red onion, corn and more. I love this combination of ingredients, and I really enjoy reading Carol's blog. It's not the first time I've found a really good recipe on her blog. I decided to try it.
This "no cooking required" satisfying salad is packed with protein, is easy to assemble, and perfect for this 90 degree weather.
I don't always eat dressing on my salads, but I know most people do. Carol shares a wonderful homemade salad dressing recipe for the salad.
In addition, I am not able to digest corn very well- so I left it out. I sprinkled my salad with some freshly ground cumin and was a happy camper.
The black beans in the salad provide substantial protein, and the creamy avocado tastes almost like a dressing to me. I can only imagine how good the salad tastes with Carol's homemade dressing.
I ate the salad as a meal since it's so hot that I really didn't feel like eating anything else. I loved everything in it, and the recipe met gluten-free and vegan standards. The salad is versatile and can be eaten in a variety of ways.

It was a change for me as well. I often use chickpeas but never thought of black beans
DeleteThis looks delicious. I'd have to leave out the corn too. For the first time in four or five years I let a craving for corn on the cob get to me and I was not feeling good for two days afterwards. It did taste wonderful but not worth the stomach issues.

DeleteI love salads without mayo for summer gigs. I saw this on Carol's too and saved the recipe but I'm glad to hear it's good without the dressing. When I saw it, I put the beans and avocado on this week's shopping list. I like the idea of serving over quinoa -- Rick would appreciate that especially!

ReplyDeleteIt's pretty close to your version except for the corn (which I can't digest) and the salad dressing. I made it again last night with a side of white sticky rice and made your salad dressing for my husband. He loved it. Great recipe and I really enjoy your blog!!
