Snow Pea Salad With Creamy Tahini Dressing


Do you love an interesting salad? 
This flavorful Asian salad is made with sliced snow peas, radishes, scallions, and cilantro. It is served over a bed of greens and topped with a generous amount of thinly sliced almonds.

It gets tossed  with a creamy tahini dressing (recipe below)- and then topped with sliced almonds and toasted sesame seeds.

Slice red onions into rings and then cut each ring in half.

Ingredients:
12 ounces of snow peas, washed, strings removed and cut in half lengthwise
10 ounce bag of shredded carrots
1 cup of sliced radishes
1 cup of sliced scallions 
1 cup of chopped cilantro or parsley
1 cup of sweet red onion, sliced in half moons
Salad greens to cover the bottom of the salad bowl
2 tablespoons of toasted sesame seeds
2/3 cup of sliced almonds

Directions: 
Assemble ingredients (except almonds and sesame seeds) in a large salad bowl. Toss in the tahini dressing. Before serving,  top the salad with the sliced almonds and toasted sesame seeds. 

Creamy Tahini Dressing 
Ingredients: 
4 tablespoons of tahini 
1/4 cup of lemon or lime juice
1/2 teaspoon of garlic powder
1/4 cup of water
2 tablespoons of maple syrup or agave
Salt and cracked pepper to taste

Directions: 
Combine the tahini, lemon juice, and garlic powder in the food processor. While running add the water and maple syrup through the shoot. Process until well blended and creamy. Taste and add salt and cracked pepper if needed.

  3. Such a crunchy, healthful and yummy salad! I bought 2 kg of snow peas and still have lots of them left...gotta make some more salads for my husband :-) Tahini dressing is one of our favourite dressings.

  5. Mmmm.... this looks like an appealing springtime combination. Seems like the crisp vegetables -- even dressed -- might hold for a couple of days so you could simply save what you didn't use and then top fresh leafy greens and enjoy the combination yet another day (or two). Being fundamentally lazy, I'm always on the lookout for fresh vegetable salads that will last awhile in the refrigerator...

  7. As a big salad fan myself, I believe there's no such thing as a boring salad - it is just sometimes people don't know how to make it exciting. This one is definitely unique and tasty; loving the tahini dressing!
