Spinach, Capers and Cauliflower Rice Side Dish

This cauliflower rice and spinach side dish is a low carb, light, and fluffy recipe that is absolutely delicious. It is a quick and easy recipe that is a life saver for me in the summer when I don't feel like doing "real" cooking, yet I want something satisfying, low calorie, and low carb.

Organic frozen cauliflower rice 
I buy my organic cauliflower rice at Trader Joe's or Whole Foods for just $1.99 a bag. I like the texture and the size of the cut of the cauliflower pieces as opposed to some other brands.





Done in 5-7 minutes- so easy
I simply add the frozen cauliflower rice to a Dutch oven type of skillet , add the frozen spinach, and then the capers. There is no need to add oil or water since the cauliflower rice and spinach are frozen and give off some liquid. I cook it for about 5 minutes until all the moisture is absorbed, checking and stirring just a little.

I could eat the whole bowl
This makes a wonderful side dish for 3 or 4 or if you are like me, I like to eat the entire recipe for lunch with maybe a bowl of soup or a salad. This vegan recipe is filling without packing on the pounds, and I find it very tasty! 

Cauliflower rice is a great alternative for rice in many dishes.
I don't really taste the cauliflower, it tastes like regular rice to me. 


Cauliflower has significant health benefits too
Cauliflower is a cruciferous vegetable. Scientific research has been indicating that cruciferous vegetables like cauliflower, broccoli, cabbage, Brussels sprouts, etc. may be helpful in the prevention of cancer. It gives me even more reason to want to include this wonder food in my daily diet.

Cook Time: 5-7 minutes
Serves: 4 side dishes


Ingredients: 
1 bag of frozen cauliflower rice (12 ounces)
1/2 bag of frozen leaf spinach
1/4 cup of capers
Himalayan salt and ground pepper to taste

Directions: 

Add the cauliflower rice to a Dutch oven type of skillet. Using a fork, break up any frozen clumps. Add frozen leaf spinach. Cook on a medium heat for 5-7 minutes ( stirring) until all liquid is absorbed and the cauliflower rice is fluffy. Add capers and mix.

  3. I love ALL of these ingredients, and this looks supremely good. I have never bought riced cauliflower before, but I'm going to do it and give this a try.
