Tofu Entree With Mushroom and Onion Gravy- Part of A Plant-based Thanksgiving Meal 2025



Wondering what I ate for a plant-based and gluten-free holiday entrée? This amazing tofu with mushroom gravy to start off a full plant-based holiday menu that even non-vegans loved.

A few people asked what I was planning to serve as my vegan Thanksgiving entrée this year. After thinking it over, I settled on tofu smothered in a rich flavorful onion-and-mushroom gravy. We ate it over warm rice, and the whole thing turned into one of those dishes that seems humble at first but somehow becomes the star of the plate—simple, satisfying, and surprisingly good. Paired with the butternut squash and fresh cranberry casserole, the dishes carried all the flavors of Thanksgiving.

I’ll admit, I took a shortcut with the mushroom gravy and grabbed a vegan, gluten-free mushroom gravy from Whole Foods. It turned out to be painfully bland, so I rescued it with freshly grated ginger, tamari, generous amounts of rice vinegar, and a little sugar. Honestly, I should’ve just made my own gravy with potato starch to begin with.

We spent the holiday with three other couples—none of them vegetarian—and yet not a single spoonful of the butternut squash casserole survived. Half the mushroom tofu disappeared too, even though there was plenty of turkey and other sides at the celebration at my friend's home.

People often ask what vegans actually eat for Thanksgiving, so I'm sharing a sample menu that I would serve if I were the host. 

Everything is vegan and gluten-free.

My entree is a mushroom and onion gravy with cubes of tofu over rice.

Ingredients:

1 large onion, peeled and sliced into 1/2 moons
2 containers of fresh white or portobello mushrooms, washed and sliced
1 block of organic firm tofu, drained well and cubed

Sauce 
1/2 teaspoon of freshly grated ginger
2 tablespoons of potato starch (or cornstarch)
1/4 cup of water
1/3 cup of tamari sauce 
1/3 cup of rice vinegar
1 teaspoon of sugar (of your choice)
1/4 teaspoon of garlic powder
freshly grated black pepper 
Topping: sliced scallions
 

Directions: 

In a large rimmed skillet, sauté onions and mushrooms in 1/4 cup of water or vegetable broth (or oil if your prefer) on a low flame until soft. Add tofu and continue to sauté adding a little more water or broth if needed to prevent burning. While sautéing, assemble sauce in a bowl. Add all ingredient and mix well. Pour over the sautéed vegetables and tofu and continue to cook on low for 5 minutes. Taste and add additional seasoning if desired. 

Place cooked warm rice in a pyrex casserole and flatten - add the tofu mushroom mixture to the top, decorate with scallions and serve.

A Plant-Based Thanksgiving Menu 2025

Entree:
Tofu smothered with mushroom and onion gravy, served over rice

Side:
Butternut Squash (or sweet potato), Apple, and Fresh Cranberry Bake

Vegetable:
Green Bean Medley — bright, crisp, and green

Salad:
Tasty Mediterranean salad with nuts or my grated carrot–cranberry salad — both are interesting company-worthy options

Dessert:
Vegan Pumpkin Pie — blender recipe, crustless


That’s what I’m sharing for this holiday season — a hearty plant-based menu with ingredients that truly feel like Thanksgiving that everyone can enjoy!

Home For Thanksgiving - and Back

We flew home from Florida to Philadelphia for Thanksgiving to be with our kids, grandkids, and family.  The weather was relatively mild (40' and 50's) until the last day when it was 28 degrees in the morning.

I loved the crisper weather ( for the week) but most of all I enjoyed the lights and festive decorations on all the houses. In South Florida, there are mostly condos where I live and the personal decorating is at a minimum. However, the streets and condo building are highly decorated. Maybe it just doesn't feel like the holiday season in South Florida because it' still so warm (70's and 80's).

I bought a quart of baby portobello mushrooms for Thanksgiving and never used them, so I decided to make an Asian mushroom soup to use them up. This recipe is very similar (with just a few variations) to my original recipe for hot and sour soup (link) that I published way back in 2011. 

It is delicious and easy to make!

A Plant-Based Thanksgiving- 4 of My Favorite Appetizers

Whether your family gathering is large or small, Thanksgiving is a time when lasting memories are made and the aroma of delicious traditional holiday foods ooze from the kitchen. 

Making a plant-based Thanksgiving can be a challenge, but it is not as difficult as you might think.

Most Thanksgiving sides are plant-based or can easily be made plant-based.  The greater challenge is finding the perfect entree to replace the Turkey. 

I sharing some of my favorite recipes from Thanksgiving's Past to help get think plant-based and gluten-free if you, a family member or guest have special eating needs this Thanksgiving.

If you are like our family, we like to convene about 2:00 PM, hang around with some appetizers (and drinks)🍷🍷🍷🍷🍷🍷🍷🍷🍷🍷 share some mingle time together, and then enjoy the Thanksgiving feast.

Thanksgiving Leftovers ? Fast and Easy Sweet Potato Soup -vegan

Got leftover cooked sweet potatoes from your Thanksgiving meal?  

Don’t let those leftover steamed or baked sweet potatoes from Thanksgiving go to waste!  Make this quick & delicious (spicy) 5 minute sweet potato soup. 

This creative recipe calls for a jar of organic chunky salsa (you decide if you would like your soup to be mild, medium, or spicy hot)!

Before I share the recipe, I want to mention that this recipe is one of the over 80 recipes in my plant-based soups cookbook (link to purchase on Amazon). Although all the recipes in my book are easy to make, they are not quite this easy. This recipe is a bonus quickie idea- not really a full soup recipe. Nonetheless, it is still delicious and worthy of being in my book!

     Fast and Easy Spicy Sweet Potato Soup 
                                          
Literally, set aside 5 minutes to prep, blend, and heat this fabulous recipe! Use leftover steamed sweet potatoes or leftover roasted or steamed butternut squash as the base for this delicious spicy creamy soup.  (or steam a sweet potato if you don't have any leftovers)

                              Sweet Potato, Bob, Diet, Vegetables, Eat


Here is what I do: 
I simply open a jar of organic mild chunky salsa. I then add 3 cups of vegetable broth, 1/4 cup of water, 1/2 cup of salsa and about 2 cups of cooked sweet potato or cooked butternut squash to a blender.  I blend, heat, and serve! So easy and so good.  Serves 2

Ingredients: 
1 large leftover sweet potato - steamed or baked and peeled 
1/2 cup of chunky salsa (mild, medium, or hot)
2 cups of tasty vegetable broth (I love Tabatchnicks)
1/4 cup of water 
Garnish: 
1 tablespoon of diced avocado per bowl
1 tablespoon of nut milk per bowl

Directions 

Place steamed and peeled sweet potato, salsa, water, and broth in a blender. Blend until creamy. Pour into a small pot and bring to a boil. Turn off heat and pour into 2 bowls. Top each bowl with avocado and coconut milk (or any nut milk).

Don't have leftovers? Steam a sweet potato or butternut squash first. Then follow directions.

Sweet Potato Rounds

If you are looking for a new way to enjoy sweet potatoes, look no further.
These festive sweet potato rounds are easy to prepare, make a great presentations, and taste wholesome and delicious.

For this recipe, I've mixed the juice of a fresh orange and the warming flavor of ground cinnamon with the meaty flesh of the sweet potato! I added some dried cranberries and a little rosemary for decoration. The flavors blended beautifully and the taste was divine.

Incredible Salad 2019




Salad is always one of the special dishes on our Thanksgiving table, and this year will be no exception. Last Thanksgiving I made a delicious jeweled kale and roasted acorn squash salad sprinkled with pomegranate seeds. This year I am making an interesting tossed salad mixing romaine lettuce with salad fixings and some savory condiments.

New York City Candy Sculptures and Hot Chocolate


The 22 degree temperatures didn't stop me from strolling around Manhattan the day before Thanksgiving. The change in temperature encouraged a lot of coffee and hot chocolate drinking by both the locals and the tourists. I noticed organic coffee shops springing up throughout Manhattan.

My 40 minute walk began at Penn Station, progressed towards Bryant Park on 42nd Street and eventually towards Central Park. Along the way to my son's appartment, I passed all the newly decorated store fronts all ready for the holidays!
