Gluten Free for the Holidays and Turkey-less

 


Crisp and nippy weather, chestnuts roasting on an open fire, fireplace roaring, and the aroma of a roasting turkey filling the home. That was then; plant-based and gluten-free for me is now.



Growing up, my mother always set the table brilliantly for Thanksgiving with her best china, her treasured crystal, and beautiful orange linen napkins that complemented her pristine white freshly ironed tablecloth. Our extended table was set for 18. ( yes, she had that many dishes and crystal)



Our main centerpiece was traditionally a huge cornucopia basket filled with farm fresh local Jersey apples and red grapes accompanied by two small centerpieces of filled with seasonal flowers.


Thanksgiving Then
My mother's traditional Thanksgiving meal bragged a huge banquet of Thanksgiving family recipes which included appetizers, soup, turkey, stuffing, gravy, winter squashes, mashed potatoes, salad, Brussels sprouts, green bean and onion ring casserole, pumpkin and apple pies.

Passing on the tradition 
As my mother became a senior, it was too much for her to host and handle the cooking, set up, serving, and cleaning up that hosting involved. Consequently the tradition was passed on to me the vegetarian, her one and only child. (she had me at age 42)

I shared my mother's love of cooking, her passion for entertaining and her talent for bringing family and friends together.

The Problem 

The problem was in my mid  twenties, I decided to become a vegetarian. As a result I refused to kill a turkey and have some poor defenseless bird roasting in my kitchen oven for the better part of the morning and then lay on a platter dead on my holiday table.

I Hosted Thanksgiving Without a Turkey


For starters, a turkey-less Thanksgiving did not go over well with my father, the meat eater, who had been a butcher most of his adult life! My mother was willing, my husband was used to it, my other relatives were skeptical and everyone who came was genuinely disappointed. After all, they looked forward to their Thanksgiving Turkey tradition all year long. 

Despite making a fabulous meal- everyone expected and wanted turkey.

What did I make for an Un Traditional plant-based Thanksgiving?
Delicious appetizers, soup, vegetable sides using winter squashes, stuffing and vegan gravy, and green beans. Except for the turkey everything else was the same, and I made a vegan entree which people liked but didn't replace the turkey.

Healthy Pumpkin Cake Pops ( grain free)


Looking for healthier dessert alternatives? Tis the season for pumpkin, and these adorable healthy pumpkin cake pops are easy to make, nutritious, and look like little pumpkin donut holes. Made from healthy real food ingredients, they bake up in just 20 minutes in the oven or in 5-8 minutes in the cake pop machine.



I found pumpkin decorated paper straws that we inserted into the pops as a stick. It worked great, but the majority of the pops we just popped in our mouths without a stick and were delighted with the simple but rich pumpkin treat!

These seasonal snacks are healthy for kids of all ages. They pack easily into a lunchbox, are perfect for after school, and especially fun for Halloween! They are nutritious as well as grain free, gluten free, and can be made vegan making them ideal for many types of allergies. The sweetness comes from a ripe banana and a 1/4 cup of coconut crystals ( per 20 pops).

They look cute and taste moist and delicious.  Add a few dark chocolate chips or unsweetened coconut for a tasty variation !

The recipe uses coconut flour and almond flour, both readily available in Trader Joe's and any health food store. I like grain free recipes and flourlessless recipes even better. My flourless Pumpkin muffins are a favorite.

Prep Time: 8-10 minutes
Bake Time : 20 minutes
Makes : 20 cake pops


Ingredients: 

1/2  cup almond flour
1/2 cup coconut flour
2 large eggs (vegan?  substitute two chia egg replacer recipe )
1 medium ripe banana ( mashed)
3/4 cup of pumpkin puree ( or mashed cooked sweet potato)
2 tsp of melted coconut oil
1/4 cup of coconut crystals ( Trader Joe's or health food store)
1-2 tsp cinnamon or pumpkin pie spice ( your preference)
1 teaspoon baking soda
Optional: 1/2 cup of chocolate chips ( dairy free)

Directions: 
Preheat oven to 325 degrees
Mix dry ingredients and then add wet ingredients.
Make into small balls ( 1-11/2 teaspoons) and place each ball into a well greased mini muffin tray ( makes about 20)
Bake for 20 minutes until done
or if you are using an electric cake pop machine, follow directions according to the machine.

I made them both ways and both ways were delicious, but I thought the one's that I made in the little cake machine were a little moister than the ones made in the oven.
What is it about pumpkin ??? As soon as the fall begins, I just have to have it!! I'm not even sure I love it- but it is like a fall addiction. I'll be searching for pumpkin recipes for the next few weeks.
  1. Make these pumpkin cake poppers for dessert to kick off the Halloween celebration! They are nutritious and very filling because coconut flour is packed with fiber! Fill up before the Halloween candy frenzy!
    Insert a stick or a straw for the kids or just eat them like donut holes!

Make Your Own Pumpkin Puree -so easy

Do you love butternut squash? It's pumpkin season and it's just as easy to cook up small sugar pumpkins and make your own healthy pumpkin puree. Who Knew?

Cooking or baking a pumpkin is not any different than cooking a butternut or acorn squash!

 Cans have lots of toxins from the metals including BPA- so why expose your family to those toxins when you can make own easily.

I'm not really comfortable even buying the organic canned pumpkin unless I'm really in a rush because of the toxins in that can be in the can.

Always use a sugar pumpkin for puree

You definitely want to use a sugar pumpkin for your puree. 
The larger varieties are usually blander as opposed to the sugar pumpkins with are sweeter and more flavorful. 

Sugar pumpkins usually show up at Trader Joe's, Whole Foods, and even local supermarkets. Of course if you live in an area where they grow pumpkins, local farms and farmer's markets will have them too.

The  "sugar pumpkins" are so cute, I decided to buy one, bake it, and puree my own pumpkin. It just $1.99 at Trader Joe's, and it made what would be equivalent to two cans of pureed pumpkin.

Health Reasons to Make Your Own
Why would I bother to make my own puree?  BPA, Aluminum, and Copper are part of the reasons
  • First of all canned foods are not all that healthy because of the cans. 
  • There is BPA in cans!!
  • Also, cans  are usually made of tin ( which contains considerable amounts of aluminum and copper and can leak into the food), and who knows what else lurks in there. Heavy metals are toxic, especially for little children !
  • Even organic canned pumpkin may still expose us to the undesirables that lurk in the can. 
  • The pulp of my "sugar pumpkin" was so sweet- it tasted like butternut squash! I wanted to eat it as a side dish for dinner!

Prep Time: 5 minutes
Bake Time: 30 minutes
Scoop and Mash Time: 5 minutes
Vegan, Gluten free

Place on cookie sheet ( rimmed) with a cup and half of water 
homemade pumpkin puree
scoop and mash with a fork or use an immersion blender for a whipped version

Bonus:
scoop out seeds, soak in water , and rinse and drain. Spread on cookie sheet and roast for 25 minutes on 375. Season and eat!

Easy Steps to Making Your Own Puree

1. Cut the pumpkin in half- ( first cut from stem to bottom on one side, turn the pumpkin and then do the other side.

2. Scoop out the seeds ( wash them well and you can roast them at 375 for about 25 minutes- they are tasty and healthy)** see below for how to roast the seeds.

3. Place the two halves of the pumpkin face down on a rimmed cookie sheet or large casserole pan. Add 1 and half  cups of water to the pan ( pierce the pumpkins a  few time with a fork)

4. Bake for about 1/2 hour at 350 degrees. ( It is done you can pierce a knife easily into the skin)

5. Allow to cool enough to scoop out the soft flesh and blend with an immersion blender or mash with a fork ( I used a fork)

THAT'S IT!! So Easy!!

Use it within two days or freeze it.
It will only stay fresh for two days in the refrigerator.
However, it freezes for about 3-6 months. 

If you want to freeze it, do this first to remove liquid:
Put the puree into a small mesh colander with a small plate on top to release excess liquid before freezing. Your puree will be firmer after thawing.

You can make your own pumpkin spice mix very easily too.

Pumpkin Pudding Bars- Grain Free/Gluten Free

This simple seasonal pumpkin pudding bar snack can be made quickly and enjoyed by all. I called this recipe pumpkin pudding bars because they can be cut nicely into firm bars, yet have the consistency of a creamy pudding-like texture.

This tasty dessert will satisfy anyone's pumpkin craving.
 Let's face it who isn't craving pumpkin this time of the year?  ! It seems to be everywhere right now.



In addition, this is a perfect healthy snack for kids.
It's not too sweet, can transport easily in a lunchbox, and makes a perfect after school snack that provides some protein and nutrients. A little whipped cream or whipped coconut cream topping would make it divine.


This recipe is grain free, gluten free, nut free and dairy free.

Prep Time: 5-10 minutes tops
Cook Time: 30-35 minutes
Note: I always use whole food ingredients ( but the recipes will work with regular sugar and GF flour)

Ingredients: 
2 cups of pumpkin puree or ( 1 can of pumpkin )
1/2 cup of coconut sugar ( get in the health food store- it looks and acts like brown sugar but is lower in carbs and higher in fiber  and more nutritious)
4 large eggs, beaten
2 Tablespoons coconut flour ( or any gluten free flour)
2 Tablespoons coconut or almond milk ( Add if using coconut flour which needs extra liquid, omit for reg GF flour)
1/8 teaspoon salt
1 teaspoon of pumpkin pie spice ( or if you don't have any make your own  - easy pumpkin pie spice mix  )
Optional: Add plenty of chocolate chips if you must! ( I did)

Directions
Preheat oven to 350 
In a medium bowl, (using a large spoon), cream the pumpkin and coconut sugar until smooth. Add the beaten eggs, almond milk or coconut milk and mix well. Then add the spices and coconut flour. Mix well, smashing any lumps that form if you are using the coconut flour..
Line a brownie pan with parchment paper and pour in batter. Bake for about 30-40 minutes until set , but not overdone,. Cool on wire racks. Cut into bars.

Gluten Free Pumpkin Pie with Grain Free Crust

Pumpkin Pie seems to be everyone's favorite pie, especially this time of the year! This easy to make gluten-free pumpkin pie is delicious.

I have been experimenting with simple crusts that are grain free.This crust is made from almonds and does not have to be rolled. I'm no fancy baker, so I was delighted with the easy simple recipe.





The pumpkin pie recipe has two steps: 
  • the grain free/gluten free/ dairy free crust   
  • the golden pumpkin filling ( DF GF too) 

Make The Crust First
Preheat oven to 375 degrees
 
Ingredients for the Crust: 
1 and 1/4 cups of raw almonds
1/2 coconut sugar ( available in health food stores) it looks and acts like brown sugar but healthier
2 Tablespoons of coconut oil or butter.
 
Crust Directions:
Use a food processor with the metal blade. Place the almonds and coconut oil in the food processor   Turn it on and as it is chopping, add coconut sugar slowly from the chute. Process on an off until the nuts become chopped small and the oil and coconut sugar begin to bind somewhat. Turn off the food processor and press the mixture into the base of a 9 inch pan and set aside.

Ingredients for The Filling:
 1 15ounce can of organic pumpkin puree
1 and half cups of full fat coconut milk or organic half and half
2 large eggs, beaten
1/2 - 3/4 cup of coconut sugar 
1 teaspoon of cinnamon+ 1/4 teaspoon dry ground ginger OR
use 1 teaspoon of pumpkin pie spice mix (or make your own pumpkin pie spice mix )
1/8 teaspoon of sea salt
optional: 1/8 teaspoon cardamom** my favorite!! (only if you like cardamom)

Directions for The Filling 
Using a large spoon, mix all filling ingredients in a medium sized bowl until smooth.
Pour the filling on top of the pie crust.
Place in preheated oven for 45 minutes

In just 45 minutes you will be eating a homemade delicious pumpkin pie with a dab of whipped cream on top!

I was excited because everyone, even those who were not gluten free,  enjoyed this healthy delicious pumpkin pie!!!

My notes: 
This pie can be dairy-free/parve if you use coconut milk and coconut whipped cream in place of the dairy.
