Scrambled Tofu (Better Than Scrambled Eggs?)




You say scrambled eggs, I say scrambled tofu! 

The resemblance is almost uncanny—both in taste and texture—making this plant-based version a satisfying swap for a classic breakfast favorite.

I was served this dish while on my recent cruise, where finding options that fit both a vegan and gluten-free lifestyle can be tricky. Despite an abundant breakfast spread—French toast, pancakes, eggs, sausage, bacon, oatmeal, and cereals—there wasn’t much I could actually eat given my dietary restrictions.

A High-Protein Vegan & Gluten-Free Breakfast

When I mentioned that I might skip breakfast, the maître d’ encouraged me to trust the chef and let him come up with something for me. I was served a warm, flavorful hefty plate of scrambled tofu with mushrooms and spinach—and it completely exceeded my expectations.




Turmeric Gives It the Right Color

The chef used turmeric to give the tofu that familiar golden-yellow color, mimicking traditional scrambled eggs. Paired with gluten-free toast, it was a nourishing, protein-packed breakfast that kept me full and energized.

Quick and Easy

Since returning home, I made this scrambled tofu recipe another time and it was really easy. I do like it and will be adding it to my regular rotation for both breakfast or lunch. It’s quick, versatile, and easy to customize with your favorite vegetables and spices.



Healthy Alternative 

Tofu is an excellent plant-based protein source, rich in essential nutrients, making it a smart choice for anyone following a vegan or gluten-free diet or anyone who needs or wants to cut back on animal protien.

If you’re looking for a healthy vegan breakfast idea or an easy scrambled egg alternative, this scrambled tofu is definitely worth trying!

Now for those who say, I just don't like tofu- who knows? You might want to give it another chance.

  2. For tofu, it sounds good. Unfortunately, I am allergic to soy but for vegans, it's a good option.

  7. soooo, i have tried tofu twice and i really did not like it. is it the "brand" of tofu i tried or the way it was prepared, i wonder??!! i'm glad you liked it, there is nothing worse than putting time into a meal and disliking the outcome!!
