Cucumber and Radish Salad- A Hot Weather Refresher


Grated cucumber salad is extremely refreshing in this hot and humid weather that we have been having in South Florida. I was looking for lighter recipes, when I remembered when I was young, my mother used to make a grated radish and cucumber salad that my father looked forward to on hot summer nights.


I grew up in the late 1950s, and we didn't have air conditioning. We relied on cooling foods such as homemade lemonade, chilled beet borscht, refreshing frozen watermelon drinks, popsicles, and salads such as this one to help us stay cool!


Salad is a great choice during hot weather. 
We usually eat a salad every day, so I try to find a variety of ways that we can enjoy different raw vegetables in addition to our traditional lettuce, tomato, and cucumber salads.


This light grated salad is a winner. I use a little hand grater to grate the veggies.

It's Made From Only Four Ingredients:

I combined grated cucumber, slivered red onion, chopped celery, and grated radish. Cucumbers and radishes grate by hand in seconds! I then tossed the mixture of vegetables in a refreshing lime and olive oil bath with a pinch of chili powder!

If you are limiting extra calories (like me), I omit the oil and just use the fresh lime, and it tastes just as good! I am not opposed to consuming olive oil, but I prefer to get my fat from foods such as avocado, nuts, and seeds in moderation.


I purchase organic limes (Trader Joe's)  and the flavor is rich and absolutely delicious

I forgot to mention that the salad can be made rather quickly. I was able to prep the veggies in about 5-7 minutes with another 2 minutes to make the dressing.

 It holds up very well in the refrigerator (if you don't add the dressing until just you are ready to eat it), making it a great make-ahead salad for entertaining, to bring to a pot luck dinner, or to eat just for lunch or dinner.




Being gluten free, dairy free, vegan, and nut free, this light and delicious salad is allergy friendly and therefore suitable for most guests for any occasion.

I can imagine that this will become one of my summer time favorites. Another summertime favorite is my Asian Quinoa Slaw which is somewhat more time intensive and higher in protein, but really delicious.

Ingredients: 

2 medium kirby cucumbers, partially peeled and then grated
2 large red radishes, grated
1 rib of organic celery, sliced very thin
1/2 cup of chopped red onion

Directions: 

Using a hand grater, grate the cucumber and radish into a deep bowl. Add the celery and red onion and mix well.  Season with the fresh lime dressing recipe below.

Fresh Lime Bath:
Juice of 1/2 a fresh organic lime
2 teaspoons of olive oil or omit 
Pinch of chili powder
Mix well and pour over the salad when you are ready to eat.

Notes: This recipe makes a small salad for two-
double the recipe for four people.

  7. Great salad for staying cool. We have had unseasonably cool weather in the north of Florida. I am wearing a flannel shirt as I write you, sitting outside waiting on lunch to heat.
    I grew up south of Philly in a small suburf and we did not have A/C either. My mother would tun on the window unit a half hour before my father got home from work. 15 minutes later she was wearing a sweater!
