Instant Pot Carrot Apple Ginger Soup (6 Ingredients & Easy)

When the temperatures drop and everyone starts talking about snowstorms, all I want is a warm, cozy bowl of soup. Even though there’s no snow here in sunny Florida, my family in Pennsylvania and New York has been sending blizzard photos — and let’s just say, it’s serious soup weather up there!

This easy carrot apple soup is my go-to when I want something fast, nourishing, and comforting. It’s a no-fuss recipe you can throw together and have on the table in under 30 minutes. Simple ingredients. Big flavor. Zero stress.

What I love most about this soup is the natural sweetness from the carrots and apples, balanced with warming garlic, fresh ginger, and a touch of cumin. It feels cozy and grounding — exactly what you crave during the colder months.

Easy Instant Pot Carrot Apple Ginger Soup (6 Ingredients!)

Ingredients

  • 6 large organic carrots, peeled and sliced

  • 2 medium red apples, diced (I used Fuji and left the skin on)

  • 1 russet potato, peeled and cubed

  • 1 large clove garlic, diced

  • 1 tablespoon freshly grated ginger

  • Water to just cover vegetables 

  • ½ teaspoon ground cumin and 1/2 teaspoon of curry powder


Directions

  1. Place all ingredients except the cumin and curry into the liner pot of your Instant Pot.

  2. Add enough water to cover the vegetables

  3. Secure the lid and set the pressure cooker to 8 minutes.

  4. When cooking is complete, carefully release the steam according to the manufacturer’s instructions.

  5. Once all pressure is released, remove the lid.

  6. Using an immersion blender, blend until smooth and creamy (or leave a little texture if you prefer).

  7. Stir in the cumin and curry powder. Taste and adjust seasoning — you may want a bit more cumin or some freshly cracked black pepper.

That’s it. Cozy comfort in a bowl.


Variations

  • Stir in a splash of coconut milk for creaminess 

  • Top with roasted pumpkin seeds for crunch.

    What don't like curry? leave it out !

  1. Oh my gosh, that IS a blizzard! I hope your family is Ok. We got hit with a big one too, but not this much. Love the picture of you shoveling snow. It's just something we have to do when we get a snowstorm. Your carrot apple ginger soup is perfect for days like this. ; )

  6. I think we will give this one a a try. We nearly always have all the ingredients in the house and since it is minus eighteen degrees outside right now it certainly qualifies as soup weather! Fortunately we escaped the huge storm that blanketed the northeast USA.
