Three Salads and One Dressing


Salads are a healthy source of nutrients and enzymes. What better way to get those nutrients and enzymes than in a delicious daily salad? 


Eating a variety of colorful salad vegetables such as greens, reds, purples, and whites contain a variety of antioxidants may be anti-aging and may protect against cell damage.

 I am sharing three of my favorites salads and one delicious salad dressing in this post today. 


Strawberry Salad

I love the colorful contrast of dark green romaine lettuce against red strawberries and purple cabbage. I also add crisp chunks of white and green cucumber. I do not add any dressing to this salad since I find that the strawberries a juicy enough to help me enjoy the salad as it is.

Eating a variety of colors is vital for good health. Each color provides unique antioxidants that may help prevent degenerative diseases that depend on antioxidants for cell protection.



Tomato Salad

I love this savory combination of flavors in this delicious tomato salad. I use vine ripe red tomatoes, red onion, black dried olives, and green scallion. I top the salad with salt, cracked pepper, and a frugal amount of cumin.

Tomatoes provide generous amounts of a substance called lycopene which may be helpful to help protect against cell damage. It is a red pigment found in tomatoes, watermelon, papayas, and pink grapefruit. 


Carrot Salad

Shredded carrots, chick peas and scallions are the base of this colorful raw salad. Carrots provide beta carotene which is especially helpful for the eyes and skin. 



This sweet juicy crunchy salad is different and hearty tasting. A nice change to a green salad.

As many of you know, I have eliminated the use of oil (not fats such as nuts, seeds, and avocado) from my diet due to the extremely high caloric aspect and high fat content of pure oil. This decision is based on information found on Forks Over Knives website and cutting edge information shared by many respected doctors who are also authors, surgeons, and cardiologists such as Dr. Neal Barnard, Dr. Essylton, Dr. John McDougall, etc. Dr. 

Why am I telling you this again? Because my dressing today is oil-free and that may be strange to many!

    1. I find that fruit in the salad makes it juicy and I don't need dressing. My favorite fruit is actually apple in my salad.

  2. Adding fruit to salad is something I have only done recently, and by that I mean in the last five years. Now, I absolutely love it! Blueberries in particular. In the summer, I also add fresh corn. Spinach, corn, and blueberries, is one of my favorite combinations. I’m going to try your dressing. Great post!

  4. I'm eating a lot more salads now that the ingredients are so fresh in our stores! I make homemade dressings and never buy it so I love finding new recipes! Thank you! Enjoy your afternoon!

    1. My family really likes homemade dressing and I like that they do not have chemicals and a high salat content like bottled dressing has. Homemade salad dressing is so easy to make too.

  6. warmer weather makes me think of salads too. I’ve been cutting back on oil though haven’t eliminated it yet. You inspire me!

      It took me years of reading about it before I gave up oil. We are educated to think that oil is actually good for us.. Time to start reading all the new cutting edge info about oil... I adapted very quickly- of course the area where I miss it the most is on salads.

  9. Oh, I love a strawberry salad! And yours looks especially appetizing on your lovely tablecloth. I've never thought to eat a carrot-based salad but love the idea. The husband and I like to eat carrots as snacks, so why not make them a meal?

    By the way, I figured you'd have frequented Strawbridge, being near Philly. It was so nostalgic when you mentioned that yours had a restaurant; the one in Echelon did too, and it was always so much fun to eat there. Now that whole malls are closing down, department store dining really is a relic!
