Baked Crunchy Tortilla Chips, - GF and Oil-Free

These crunchy seasoned tortilla chips are baked, not fried, and taste really awesome. I make them frequently because they are a fast, EASY, and convenient.

I purchase tortillas from 365 brand at Whole Foods because they are very reasonable, organic, non-GMO and gluten-free. I've looked everywhere and have only been able to find organic non-GMO at Whole Foods.

We enjoy eating these chips broken up and added to a bowl of soup, or as a scooper for dips- They are low fat (oil-free), so it won't tip the scales.

Pre-pandemic, we used to like to eat at Brio Italian Grill (A chain) which served trianglular seasoned and seeded crisps of some sort in their bread basket. Being gluten-free, I could never indulge, but everyone else in our party would fight over them (politely and discretely, of course). We almost always ordered a second basket.

I was delighted when I realized that I could make a crispy chip at home that I could actually eat.

 I cut each flat tortilla into long strips or triangles. I then season and bake the strips for 5 minutes until crispy. That's it! OR if you prefer not to season them, you can leave them plain.

For those on Weight Watchers, or those on a whole food plant-based diet who are concerned about using oil, I use "aquafaba" (the liquid from cooked or canned chickpeas) in lieu of oil to help the seasonings adhere to the tortilla strips (see my notes). Of course you could use oil to brush the strips if you prefer- it works too.

My favorite seasoning to sprinkle on these strips is Za'atar which is a middle eastern spice combination containing sesame seeds and spices. Any spice or seed that you like (garlic powder, salt, onion powder, chili powder, oregano, cumin seed, sesame seeds, sunflower seeds etc.) will work.

 Za'atar Seasoning (link)  is available in many stores or online. The one I linked here is from Israel (Kosher and Parve) and is made with hyssop, which is an herb mentioned in the bible.

Another Za'atar that I buy online is a Lebanese za'atar recipe. It contains oregano and sumac as the main spices-  Sahadi Lebanese Style Zaatar - 7 ounce

6 tortillas, cut into long strips or triangles 
1/4 cup of aquafaba or oil for brushing the strips (see notes)
za'atar (or seasonings of you choice)

Preheat oven to 400 
Cut the tortilla or tortillas into long strips or triangles. ( I stack 3 at a time and cut) Place them on a parchment covered cookie sheet. Brush each strip with aquafaba (or oil) and then sprinkle za'atar or your seasonings of choice. Bake for 5-6 minutes (watching very carefully that they don't burn). Remove from oven and enjoy. 

Air Fry Method? 
Place in the air fryer for 3-4 minutes and WATCH VERY CAREFULLY - they will crisp up or burn very quickly.

My Notes

1. Save the liquid from a can of chickpeas and you have "aquafaba" and can use it instead of oil for brushing on these chips (or for roasting vegetables) if you want to avoid or limit oil. 

2. Corn is a product that is now almost always genetically modified. Therefore I always look for organic whenever I buy any kind of corn product: corn starch, corn meal, corn muffins, corn chips, corn flakes, corn, etc.
