Avocado Stuffed Baked Potato




Day 40 Of The Shut In !!! Feels like day 900~~

I am making quick and easy meals because I am getting tired of cooking twice a day, but we still need to eat healthy immune building food. Avocado stuffed baked potatoes practically no prep and time for the baked potato to bake. yesterday's lunch creation! Avocado Stuffed Baked Potato.





Avocados are rich in natural oils and are easily substituted for butter in this vegan avocado stuffed baked potato recipe. If you have ever had avocado toast, you know how delicious mashed avocado can be, especially with some interesting herbs or seasonings. 



I mashed a half of an avocado, and stuffed it in a freshly baked potato. I then sprinkled Himalayan salt and a delicious French blend of dried herbs known as Herbs De Provence, which is basically a blend of savory. thyme, basil, lavender, and fennel. 

I ate the stuffed potato for lunch with a bowl of my carrot peanut soup. This light meal was nutrient dense, delicious, and satisfying. If I were hungrier, I might have included a salad such as my incredible walnut salad. (amazing).

I used a golden potato, but the idea will work with a baked Russet or sweet potato as well. It is such a simple healthy lunch that can be thrown together very quickly. It is amazing what healthy food we can make rather quickly.


I always liked potatoes but shied away from them for many reasons. First and foremost, they are high in carbs. Second, I thought they were high in sugar and devoid of nutrients. Now I find out they may actually be good for you. In addition, WW allows one serving of white potato as zero points on the purple plan! Guess which plan I'm following!! 




Are Potatoes Good For You ?- 

White potatoes often get a bad rap, but according to Anthony William, the Medical Medium, and author of Cleanse to Heal (affiliate link)  (and many other top selling wellness books)( affiliate link), white potatoes are excellent nutritional choices. Why?

Potatoes: Abundant in amino acids that specifically inhibit viral growth. Potatoes are high in glucose that provides substance to the liver, as it’s precisely what the liver relies on to keep strong. It also helps build up glycogen storage, the very resource that protects us against blood sugar problems, weight gain, fatty liver, and dirty blood syndrome. They’re also shunned for being a nightshade, when in truth they have the ability to reverse many varieties of chronic illness."



I enjoyed my simple lunch and feel good that the avocado, potato, and my soup were all healthy and immune building! I love that simple unprocessed foods, such as avocado and potatoes, meet both gluten free and vegan standards!









I actually did not mash my avocado half. I cut my avocado in half, removed the pit, and then simply squeezed the inside of the avocado onto my cooked baked potato. Saves the mess of a bowl and fork to wash.

  3. I love avocado. I don't have any at the moment though, and there's only 1 potato left. :)
