Vegetable Kabob Appetizers- Vegetarian, Gluten Free and Easy

Which appetizer should you make for your next party?
These colorful appetizing vegetable kabobs make a great presentation, are easy to make, as well as easy to serve. In fact, they make a perfect finger food! Since everything is on the skewer, no additional utensils are needed. Just pick it up and eat it!





I like this type of appetizer because it can be made in advance, it doesn't need to be heated before guests arrive, and it's versatile, making it very practical for the host.
I used pickled beets, mozzarella balls, artichoke hearts, and different colored cherry tomatoes. If you prefer a vegan skewer, omit the mozzarella balls. If you don't like beets (my husband despises them), substitute something else. 



This party food is also gluten free, vegetarian, nut free, and can be vegan if you omit the cheese- important because now a days guests often have a list of food restrictions. 

It's easy to bring to a party because it's not messy, saucy, or cumbersome. I just cut everything in half to make it bite size, strung it on a medium size skewer, and laid it on a white serving plate. 

They come in many sizes in the supermarket, find a size you like


Did I also mention that this festive appetizer is healthy! It's basically vegetables with a bite of cheese or as I pointed out before, you can make these vegan as well. The skewers are like thick pointed toothpicks and the end tends to be sharp, so I would be cautious around kids! My friend Yda, who is an amazing cook, made these to an adult party.

Needless to say, there were none left over! 

Vegetable kabobs

Ingredients: 
Cherry tomatoes, multicolored
Jar of marinated artichoke hearts, (not in oil)
Mozzarella balls 
Small round pickled beets, drained (from a jar)


Directions: 
Cut cherry tomatoes, beets, and mozzarella balls in half and cut artichoke hearts into bite size pieces. String the vegetables and cheese alternately on a wooden toothpick skewer. Lay on a serving plate. Refrigerate until ready to serve.

  7. My husband doesn’t like beets either but I could easily make a few with the beets for me. Wow, these are beautiful, I see why they would be a hit at a party. What is it with guys hating beets?!
