Creamy Fettuccine Alfredo- Weight Watchers Friendly

It's time to get back to some lighter eating now that the holidays are almost over, and I've got the perfect Weight Watcher friendly recipe to get you started!

Fettuccine Alfredo is a favorite of mine but it's high too in calories for daily consumption. Did you know that a small bowl of Fettuccine Alfredo has over 400 calories and that's for a just a 1 cup serving!! Yikes, but not to worry! Have I got a recipe for you!






Fettuccine Alfredo Weight Watcher Friendly Style
I've found a way to have my cake and eat it too- so to speak. I've created Fettuccine Alfredo Weight Watchers style. The best part is that the effort is minimal. In fact, I take two prepared products and mix them together. Doesn't get easier or faster than that!

I made this dish over the holidays when my son and his family was visiting. My daughter in law Wendy and my 12 year old granddaughter both tried it and loved it. When I asked Wendy whether I should post the idea on my blog she said, "people may think it's weird" but then added, "but it's really really good." So here goes!

The Noodles



Start with a package of tofu (Shirataki) fettuccine shaped noodles substitute. I buy them in the supermarket in the tofu section. They are gluten free, Non-gmo verified, kosher, and vegan. They also have only 10 calories per serving. I love it as a noodle substitute because it's tasty, filling, reminds of a bowl of noodles and I can eat as much as I want without worrying about the calories and carbs.

There is a trick to using these noodles
When you open the package, discard the water- it does have an odor. Next, wash the noodles well. I soak them for a full minute and then rinse them a few times and drain them well. Next, I spray a skillet with avocado or olive oil and sautee them for a few minutes in the skillet. They do not need to be cooked, just heated.

Tzatziki Sauce


Costco sells a brand of Tzatziki sauce that is rich, creamy, and delicious. It is organic, gluten free, kosher, and only 40 calories per 2 tablespoons. It's the best tzatziki sauce I've ever tasted and it's made by a company called Hannah.

Noodle and Tzatziki Sauce
Remove your hot noodles from the skillet, mix well with 1 to 2 tablespoons of tzatziki sauce and indulge and enjoy immediately.

The entire package of noodle substitute is only 40 calories and 2 tablespoons of  tzatziki is only 40 calories. Both are low in carbs as well.

  7. These noodles are totally new to me. I'll have to see if my store carries them because I like having options for my GF and low-carb friends. I'll look for the sauce next time I get a chance to shop in Costco.

  8. What a great idea. I have a package of konjac noodles that I've been afraid to use but I may just brave them using your ideas about washing them, as I have a feeling they may also smell.

  13. Oh my, when I first read this recipe I thought to myself, “Judee is crazy. This is as far from fettuccine Alfredo as I ever want to attempt.“ But yesterday I went out and got the ingredients because I knew today I would have exactly one nanosecond to eat lunch between clients. At the first spoonful I said to myself, nope not pasta, not Parmesan cheese and cream, nope nope nope. Then suddenly at the third spoonful I ***felt*** like I used to feel eating fettuccine Alfredo. Could not have guessed. Thank you Judee! Now back to work fully satisfied. What a phenomenal life hack.
