The past week has been brutally hot and very humid here in Pennsylvania, so we've been eating a lot of salads! This is a red cabbage, cucumber and cherry tomato salad was delicious with a lemon dressing ! See what else has been happening in my kitchen!

Continuing with the heatwave, I've made gazpacho ( link to recipe) on quite a few nights. My husband loves it, and it quick and easy to make in the blender with tomatoes, cucumbers, red peppers, red onion, and spices.
Adding to the no -cook theme, I've also made my(link to recipe) chickpea spread (low fat high protein) with sliced green olives
Next I'm sharing some new items in my kitchen....I love this summer festive serving bowl. I've actually bought it about 5 years ago but I had stored it away and forgot about it until now.
The bottom can be filled with ice to keep the dip cold or it can be used as two separate bowls. I love the colors!! |
We buy mangos by the case of 8 from a produce store
when they are in season - which is now !
I keep these packets sweetened with stevia lemonade on hand for a really hot summer days! We fill a glass with ice, a packet and water. Great for keeping hydrated.
My husband ordered these supplements for himself . He just started taking them. Has anyone ever taken them? Are they helpful for energy? The commercials are very convincing.

I also made a delicious marinated cucumber salad during the heat wave. I could have added avocado to it as well. I added some freshly squeezed orange to the marinade for a delicious and refreshing change. Summer is for salads! Were you affected by the heatwave? What did you eat? |
I always prefer to eat real produce instead of supplements, but I suppose they would be good as an addition or if the real thing wasn't available.
ReplyDeleteYes it's been very hot and humid here so we've been eating a lot of lighter meals filled with fresh veggies. I love your dip bowl. I have one with a Fall theme but need one for regular use. They are so nice to have to keep dips cool.

ReplyDeleteIt's quite hot over here too, today it's 36C, but I still went to balcony and sat there in the sun for 40 minutes for my vitamin D :-)) That summer dip bowl is lovely.

Cooking takes a hit here in the hot weather but we don’t get into fancy salads I’m afraid. Somehow we get by.
ReplyDeletei have an unhealthy obsession with bowls, i could never figure it out. not dishes, just bowls. i have never made or eaten qazpacho. we eat a lot of fresh veggies in the summer and i make a lot of different pasta salads!! i enjoy seeing what other people make!!

ReplyDeleteYour hot weather meal swaps look colorful and sure they tasted delicious. My husband has made a variation of the cuke salad using red onions as well. It's been years since I've made gazpacho but it was a summer favorite when we had our own veggie garden in VA. We've limited big oven use in the heat and instead use a small counter top model for roasted veggies and tonight that's what will be on the pasta primavera served with a side salad.

Summer in Florida is always hot and humid like a heat wave. We have lots of showers too as it's the rainy season. I've been enjoying lots of salads & smoothies,
ReplyDeletethe weather has been cold here - so windy, which is very unusual for a brisbane winter. Love a cuke salad! and i love your polka-dotted dish. and the chickpea spread sounds great.
