Cauliflower with Creamy Lemon Sauce-Zero points and Vegan



If you are a lemon lover and looking for an idea to perk up your plain vegetables, this creamy lemon sauce over cauliflower is not to be ignored. 





Health Giving Ingredients: 
It is quick and easy to make, contains only super healthy ingredients, and is low in fat and calories. In fact, it's ZERO points on WW. Pour it on baby and bring the taste of your vegetables to a whole new level.

The bonus is that the garlic, onions, turmeric, and lemons in this sauce are full of antioxidants and immune boosting ingredients. A real plus during Covid when it's important to keep levels high!

I've been doing more cooking, and I have to admit that I've been searching for new interesting ideas. This recipe hit the spot! The sauce could be used on just about any vegetable that you could put lemon.

Nutritional Yeast Adds a Cheesy Flavor
The sauce is light and lemony, but if you want something a little thicker and with a richer taste, add the optional nutritional yeast. Nutritional yeast is a inactive yeast that provides protein, vitamins, and trace minerals. It has a cheese-like taste and is frequently added to flavor vegan recipes. You can purchase nutritional yeast (link) on Amazon or in most supermarkets in the spice aisle.

Zero Points on Weight Watchers 
If you are following Weight Watchers, this sauce is zero points on the blue and purple programs (not sure about the green program). Nutritional yeast is zero points for 1 tablespoon.

Cook Time: 8 minutes
Serves: 2


Ingredients: 
Olive oil spray 
2 cups of sliced onion 
2 cloves of garlic 
1/2 teaspoon of Herbs De Provence
1/4 teaspoon of turmeric 
1/4 cup of freshly squeezed lemon juice
1/4 cup of water
Salt and pepper
Optional: 1/4 cup of nutritional yeast
Garnish: Your choice of chopped herbs such as parsley, dill, chives, etc. or additional seasoning such as herbs de Provence, paprika, etc. 

Directions: 
Spray a large skillet with olive oil. Add the onions and garlic and sautee until onions are soft. Add the sauteed onions, garlic, water, lemon juice and seasonings to a strong blender. Blend until smooth and creamy (adding a teaspoon or two of water only if needed to blend). If you are familiar and like the cheesy taste of nutritional yeast, I like to add some.
